There is something magical about beets….The color, the shelf life in your fridge and of course the wonderful nutritional value of this root vegetable. This past week I found beautiful “candy cane” beet’s at Safeway.
Tonight for dinner I cooked them to serve with some meatloaf ( extreme low-fat version with organic meat) and saffron rice.
